Very simple to make, delicious bread with a crispy crust

Ingredients
3cupstrong wheat flour (type 650)
1½tspinstant yeast
2tsp salt
1½cupwarm water
Instructions
Add all dry ingredients into a bowl and mix. Pour warm water and mix with a large spoon (or by hand) until there are no traces of dry flour in the dough.
Cover with plastic wrap or a damp kitchen towel and leave to rise overnight (if you start in the evening), or for all day (if you start in the morning).
Place the cast iron pot in the oven and heat to 230℃ for at least 30 minutes. The pot should be really hot.
Gently place the risen dough on a board or countertop sprinkled with flour, lightly gather it into a ball shape. Place it on baking paper with the smooth side up.
Remove the pot from the oven and carefully place the bread into it, holding by the baking paper. You can put 2-3 ice cubes between the paper and the pot wall for extra steam.Bake for 30 minutes covered and 15 minutes uncovered, until the crust is beautifully golden brown.
