Carrot cake with nuts, chocolate chips and cream cheese frosting

Moist and wonderful carrot cake with nuts, chocolate chips and cream cheese frosting

Equipment

  • grater
  • 2 medium size bowls
  • 1 big bowl or stand mixer bowl
  • stand mixer with a whisk or a hand mixer
  • scale and measuring cups and spoons
  • knife, spatula of big spoon
  • chopping board

Ingredients

  • 260 g wheat flour
  • tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon or gingerbread spice
  • 400 g carrots
  • 4 eggs large
  • 200 g caster sugar
  • 150 g brown sugar or cane sugar
  • 1 tsp vanilla essence
  • 300 ml oil
  • 100 g milk chocolate chocolate chips or chopped
  • 100 g nuts use the ones you like: pecan, hazelnuts or walnuts

Icing

  • 300 g cream cheese you may use Philadelphia or the cheescake type
  • 259 g mascarpone
  • 3 Tbsp icing sugar or less, adjust to taste
  • ½ tsp vanilla extract
  • for decoration: nuts, sprinkles, coconut shreds

Instructions

Dough

  • Take a piece of parchment roughly the size of your baking pan and squeeze it well. Once you unfold it, it will be all wrinkled and a lot easier to line your pan. Once it's lined, set it aside.
  • Sieve the flour, soda, baking powder, salt and cinnamon into the mid-size bowl. Mix all well together.
  • Peel and grate the carrots (fine mesh), transfer to the second bowl.
  • Crack the eggs into the stand mixer bowl. Add the sugars and beat on high until everything is light and fluffy.
  • Lower the speed and gradually add oil (slowly, in 3-4 parts), making sure it is well incorporated before the next turn. Mix in the vanilla extract.
  • Add the grated carrots and chocolate chips, mix with the spatula.
  • At the end, add the flour and dry ingredients mix from the bowl and blend everything quickly with the spatula.

Icing

  • Mix together all the ingredients for the frosting until smooth.
  • Once the cake has cooled completely, top it generously with the frosting. You may also decorate the top with halved nuts, marzipan carrots, lightly roasted coconut shreds or with sprinkles.
