Best vanilla biscuits

Melt-in-your-mouth biscuits which smell of butter and vanilla

Equipment

  • stand mixer
  • kitchen scale
  • mid-size bowl
  • baking paper
  • measuring cups and spoons; cup = 250ml, Tbsp = 15ml, tsp = 5ml
  • 2 baking trays

Ingredients

  • 225 g butter room temperature
  • 300 g sugar
  • 1 tsp vanilla essence
  • 1 large egg
  • 335 g all-purpose flour
  • 1 tsp salt
  • ½ tsp baking soda

For rolling

  • regular sugar / cane sugar / sprinkles/ chopped nuts etc

Instructions

  • Preheat the oven to 180℃ and line 2 baking trays with baking paper
  • Place the butter and sugar in the mixer bowl and beat at high speed until the mixture is light and very fluffy.
    Add the vanilla essence and beat for a while.
  • Add the egg and beat until combined with the mixture.
  • Sift the flour, baking soda and salt into a bowl and mix at low speed until all ingredients are combined.
  • Add sugar for rolling into a bowl.
    Form dough balls the size of about 2 tablespoons (the easiest way to do this is with an ice cream scoop) and roll in sugar.

    Make the balls as you go as they bake. If you prepare them too early, the mixture will soften too much.
  • Bake for about 15 minutes, until the cookies have puffed up and the edges have set, but are still pale golden in color.

  • Leave the cookies on the baking tray for 10 minutes until they deflate and get firm
